Smith Eats - Protein Cookies




Ingredients: 

1 egg 
1 cup almond flour
1/3 cup vanilla protein powder 
1 tbsp flax seed 
1/2 tsp baking soda
1/4 tsp sea salt
1/4 cup coconut oil, melted 
1/4 cup nut butter (you can use almond, cashew, mixed, or peanut butter) 
1 tbsp maple syrup 
1 tsp vanilla 
1/4 cup dark chocolate chips (you can also chop up a dark chocolate bar or add white chocolate chips)

Directions: 

Preheat your oven to 350 degrees 
Line your baking sheet with parchment paper
Mix all of your dry ingredients in a mixing bowl
In a separate bowl, mix all of your wet ingredients 
Combine the wet and dry ingredients and fold in your chocolate chips. 
Roll the dough into small bowls and bake for 10 minutes (or until they're golden brown).

    I made these (actually twice), and I love them. I used walnuts this time instead of chocolate chips. I like them as well.
